Kavılca Buğdayı: Sağlıklı ve Geleneksel Bir Antik Buğday Türü
Anavatanı Ardahan ve Kars olan kavılca buğdayı, soğuk iklimlere dayanıklı, kalın ve katmanlı kabuğuyla dikkat çeken bir buğday türüdür. Gluten oranı diğer normal buğday türlerine göre oldukça düşüktür. Tarım Bakanlığının destekleriyle yaklaşık 5 yıl önce tekrar toprakla buluşan kavılca buğdayı, coğrafi işareti de alınmıştır. Bu özel buğday türünden elde edilen glütensiz ve şekersiz organik un, ulusal firmaların tercihi haline gelmiştir.
Kavılca buğdayını toprakla buluşturan üreticilerden biri olan Burak Taştan, bu antik buğdayı üretmenin gururunu yaşadığını belirtmektedir. Taştan, genetiği bozulmamış ve oynanmamış kavılca buğdayını hasat ederek sağlıklı bir gıda olarak sofralara ulaştırmaktan mutluluk duyduklarını ifade etmektedir. Her yıl üretim sahalarını artırmayı hedeflediklerini vurgulamaktadır.
Kavılca buğdayı, kılçıklı bir buğday çeşididir ve Triticum turgidumun dicoccoides alt türüne aittir. Yabani ve evcil tür arasındaki temel fark, yabani türün olgunlaşan tohumunun çatlayarak toprağa saçılmasıdır. Evcil türde ise tohum bütün halde kalır ve hasadı daha kolaydır.
Kavılca buğdayı, Siyez buğdayı ile birlikte en eski evcilleştirilen mahsüllerden biridir. Antik çağlarda yaygın olarak kültüre alınan bu bitki, günümüzde Avrupa ve Asya’nın dağlık bölgelerinde yetişen bir relikt bitki olarak kabul edilmektedir. Türkiye’de neredeyse yok olmak üzereyken Ardahan ilinde yeniden tarımı yapılmaya başlanmıştır.
Kavılca buğdayı, sağlıklı ve geleneksel bir antik buğday türü olarak, özel bir yere sahiptir. Sağlık açısından faydaları ve benzersiz yapısıyla öne çıkan bu buğday türü, gelecek nesillere aktarılmaya devam edilmelidir.
