Antep Fıstığı Hasadı ve İşlenme Süreci
Türkiye’nin en önemli tarımsal ihraç ürünlerinden biri olan Antep fıstığı, hasat sürecinin ardından işlenerek tezgahlardaki yerini alıyor. Gastronomi kenti Gaziantep’te fıstık, kavlatma tesislerinde dış kabuğu soyularak güneşte kurutulduktan sonra çiftçilere teslim ediliyor. Fıstık hasadı, tarladan tezgaha zorlu bir yolculukla gerçekleşiyor.
Fıstık Hasadı
Fıstık hasadı, temmuz ayında baklava yapımında kullanılan “boz” fıstığın toplanmasıyla başlar ve eylül ayının başından itibaren “kırmızı beng” fıstığı toplanarak devam eder. Çiftçiler sabah erken saatlerde tarlalara gelerek fıstık salkımlarını toplarlar. Fıstıklar çuvallara konularak kavlatma tesislerine götürülür.
Kavlatma Süreci
Kavlatma tesislerinde fıstıkların kabukları soyulur ve kavlak haline getirilir. Daha sonra fıstıklar güneşte kurutulmak üzere geniş alanlara serilir. Burada işçiler sürekli olarak fıstıkları karıştırarak erken kurumasını sağlarlar.
Fıstık İşleme
Fıstık işleme tesislerinde fıstıklar son sistem makinelerde işlem görür. Kabuğu soyulan ve kavlak hale getirilen fıstıklar, çiftçilere teslim edilmek üzere paketlenir. Bu sayede çiftçilerin yükü azalır ve fıstık hazır hale gelir.
Rekolte Durumu
Bu yıl Antep fıstığı rekoltesinin yüksek olması nedeniyle çiftçiler ve işletmeler yoğun bir dönem yaşamaktadır. Ağaçlarda boş fıstık bulunması sebebiyle ayrıştırma işlemi zorlaşmış olsa da bereketli bir sezon geçirilmektedir.
Ekonomik Etkiler
Antep fıstığı, hem yurt içinde hem de yurt dışında satılarak ekonomiye katkı sağlamaktadır. Bu ürün, birçok kişinin geçim kaynağı olup Gaziantep’in en önemli geçim kaynaklarından biridir.
